Roasted Sweet Italian Sausages with Wilted Grapes

- 1 tablespoon olive oil
- 1 large yellow onion, cut into half moons
- 1/2 teaspoon salt
- 2 garlic cloves, minced
- 4 Italian sausage links,
- 1 pound red seedless grapes
- 6 sprigs of fresh thyme
- creamy stone-ground grits, to serve
Preheat oven to 400 degrees.
In a medium cast iron pan, heat oil over medium-low heat. Add onion and season with salt and cook until onions are translucent, about 5 minutes. Then add garlic and cook until fragrant, about a minute. Nestle the sausage, grapes and thyme with the onions. Transfer pan to oven and roast until the sausage is cooked thru and the grapes have started to burst and skins have started to blister, about 20 to 25 minutes.
Serve on top warm grits.
