Homemade Roast Beef

Ingredients:
- 2 pound piece top round beef
- 2 teaspoons Kosher salt
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoons mustard powder
- 1 teaspoon ground thyme
- 1 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- Cornichons, for serving
- Whole grain mustard, for serving
- Rustic bread, for serving
Directions:
Preheat oven to 400 degrees F.
In a small bowl whisk together the salt, garlic powder, mustard powder, ground thyme and black pepper. Season the beef all over with the spice rub, making sure to massage it into the meat so you use everything.
Preheat a large skillet over medium-high heat. Add the oil and when the oil is hot sear the meat until deeply caramelized on all sides, this will take about 2 minutes per side. Place the seared meat on a baking sheet and bake in the oven for approximately 25 minutes, or until a meat thermometer inserted into the center of the meat reaches 125 degrees F (for medium-rare). Remove from the oven and let rest at least 10 minutes.
Thinly slice and serve with cornichons, whole grain mustard and bread.
