Melon Gazpacho

Melon Gazpacho

  • 1 cantaloupe, skin and seeds removed
  • 1 english cucumber, skin and seeds removed
  • 1/2 small sweet onion; diced
  • 1/2 bulb fennel; diced
  • 1 small shallot; diced
  • 2 tablespoons mint leaves, chopped
  • 2 tablespoons chives, chopped
  • micro-greens, to garnish


Add the first seven ingredients into a blender and blend until combined. Pour into serving bowl and garnish with micro greens. Serve immediately or place in an airtight container and store in fridge.
