Melon Gazpacho

Ingredients
- 1 cantaloupe, skin and seeds removed
- 1 english cucumber, skin and seeds removed
- 1/2 small sweet onion; diced
- 1/2 bulb fennel; diced
- 1 small shallot; diced
- 2 tablespoons mint leaves, chopped
- 2 tablespoons chives, chopped
- micro-greens, to garnish
Directions
Add the first seven ingredients into a blender and blend until combined. Pour into serving bowl and garnish with micro greens. Serve immediately or place in an airtight container and store in fridge.
