Lemon Berry Bars

Crust Ingredients:

  • 1 cup ap flour
  • ¼ cup powdered sugar
  • Pinch kosher salt 
  • 1 stick unsalted butter, cut into ½-inch cubes

Filling Ingredients:

  • 4 large eggs 
  • 1 ½ cups sugar 
  • Pinch of salt 
  • ⅓ cup flour 
  • ⅓ cup lemon juice and 1 T lemon zest
  • 1/2 cup strawberries and ½ cup blackberries – pureed and strained (hopefully around ⅓ cup yield of the strained mixture)

Directions:

Preheat oven to 350 degrees F. Line an 8-inch square baking pan with parchment.

Crust: In a large bowl, whisk together flour, powdered sugar and salt. Use your hands or a pastry blender to work the butter into the flour mixture until pea size pieces. Press crust evenly into the pan and bake for 20 minutes, or until the crust is golden brown. Set aside and reduce the temp to 325 degrees F. 

Filling: In a medium bowl, whisk together the eggs, sugar and salt until light yellow and creamy. Whisk in the flour mixture until combined. Add the lemon zest, lemon juice and pureed berries and whisk until smooth. Pour into the baked crust and place back in the oven. Bake for 30-40 minutes or until the topping is set and jiggles when you lightly move the pan. Set aside to cool completley, then dust with powdered sugar and cut into bars. 

Makes about 16 bars
