Ingredients:

  • 2- 8 ounce packages cream cheese, softened
  • 1 cup sharp white cheddar, gruyere or fontina
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried mustard
  • 1 cup ham, finely chopped
  • 4 green onions, thinly sliced
  • salt to taste
  • 1 cup pecans, lightly toasted
  • 2 tbsp flat leaf parsley, chopped

Directions:

Allow cream cheese to come to room temperature, until softened, about 1 hour.

In a stand mixer, fitted with a paddle, place both cheeses, lemon juice and spices and blend until smooth, scraping down sides of the bowl when needed. Add ham and green onions and combine. Season with salt.

Spoon mixture onto a large piece of plastic wrap, forming the mixture into a ball. Wrap completely and refrigerate until firm, at least an hour, or until ready to serve.

On a large plate or medium tray, mix pecans and parsley together. Unwrap cheese ball and roll into the mixture until it is fully coated, patting the pecans into the ball to adhere. Allow to come to room temperature before serving with your favorite crackers and wine.
