Grilled Chicken Greek Wrap

- 8 chicken tenders
- kosher salt
- freshly ground pepper
- 1/4 cup fresh lemon juice
- 1 tablespoon dried oregano
- 1/2 teaspoon crushed red pepper
- 1/4 cup extra virgin olive oil
- 4 flat breads or pitas
- 1 cup lemon feta dip
- 2 vine ripened tomatoes, thinly sliced
- 1 Persian cucumber, thinly sliced
- 1 small red onion, thinly sliced
Season chicken tenders on both sides generously with salt and pepper. In a medium bowl whisk together the lemon juice, dried oregano, red pepper and olive oil. Add the chicken tenders and turn to coat evenly. Marinate in the citrus for 30 minutes.
Preheat a grill or grill pan over medium heat. Grill the chicken tenders about 4 minutes per side or until charred on the outside and cooked all the way through. Remove from grill and let rest about 5 minutes. Lightly grill the pita about 2 minutes per side to warm through and apply grill marks on both sides.
For each wrap spread 1/4 cup of lemon feta dip over grilled pita. Top with 2 chicken tenders, thinly sliced tomato, cucumber and red onion. Serve immediately.
