Blackberry Ice Cream

- 1 lb fresh blackberries, washed
- 1 ½ cups sugar
- 1 ½ cups milk
- 1 ½ cups skim milk
- 2 cups heavy cream
In a medium saucepan over medium-low heat, combine blackberries and 1/2 cup of sugar. Cook, stirring often, until the blackberries are just starting to break down and produce liquid, about 10 minutes. Then take half the cooked blackberries, milk, skim milk, heavy cream and remaining sugar and place in blender till combined and smooth. Pour mixture into ice cream maker (following the instructions of your machine). Once ice cream is done, fold in the remaining reserved blackberries. Serve immediately or store in airtight container in freezer.
