Beet Tartare

Ingredients:
- 4 medium roasted or boiled beets, cooked until just tender, skins removed and finely diced
- kosher salt, to taste
- egg yolk
- diced cornichons
- diced shallots
- capers
- dijon or whole grain mustard
- mustard seeds, soaked in warm water or vinegar to reconstitute
- lemon zest
- microgreens
- pickled jalapenos
- finely diced cherry peppers
- toasted pistachios or pine nuts
- grilled bread, to serve
Directions:
Toss the diced beets with salt and pepper to taste. Then divide the beets between individual plates or place in the center of one large platter. Top the beets with the egg yolk, if desired, and then surround the beets with the other ingredients. Serve with grilled bread.
